Coffee- check

Creamer- check.

It may not seem like a big deal trying to pack food for a camping trip, but depending on where you go and for how long, it can be.

Not every place we camp has a store nearby to pick up a few odds and ends we may have forgotten, and of course missing a few things in the long run doesn’t really matter.

Everyone will still eat and have fun running around outside by the lake.

But it’s still nice to make sure you have the coffee.

When it comes to camping you have to use what little space you have, wisely. That means not bringing everything in the house, but sticking to a specific list.

When it comes to cooking and meal plans my mind can go blank once I enter the grocery store! It’s too easy to get sidetracked. So every camping trip we come up with a meal plan-and we stick to it.

It helps us stay organized and try new things without overpacking and over spending. But sometimes my family needs options to choose from.

Like a mom’s breakfast menu. They’d be happy to help pick a few things out but asking with no suggestions leads to a lot of “I don’t know.”

-Bagels with cream cheese – Simple, classic and easy to take while camping.

-English muffins with peanut butter – Again, simple. And we can use the peanut butter later for lunch or snack ideas.

-Sausage breakfast sandwiches – For this you can use the english muffins or you can do a delicious sausage breakfast sandwich on a croissant.

-Breakfast burritos – Add some eggs, cheese, sausage and hot sauce and you can make delicious breakfast burritos. Later you can use the leftover tortilla wraps for fajitas for dinner. -View Recipe-

-Pancakes with fresh blueberries – To make it easy, pick up a mix and use it again on your next camping trip.

-French toast with fresh strawberries – French toast is so easy and delicious. Bonus- Use the leftover bread for sandwiches later and the leftover eggs for scrambled eggs the next day.

-Sausages with scrambled eggs and onions and peppers – Sausage links are our kids favorite camping breakfast and now that the are getting older, they can help cook/turn them.

-Bacon and eggs – Use any leftover bacon for BLT’s later.

-Corn beef hash with eggs – Take your time and get the corn beef extra crispy. It’s a great camping breakfast food and easy to keep in the cabinet and save fridge space, since the corn beef comes in a can.

-Toast – For those simple mornings you can enjoy toast several different ways. Avocado toast, toast with peanut butter and bananas, toast with peanut butter and honey, toast with butter and jelly.

-Oatmeal with fresh fruit – I know oatmeal sounds boring, just don’t let it be. Add the butter, add the maple syrup a little generously and dice up some bananas or strawberries. It really can be delicious if you baby it up.

-Eggs with hash browns and bacon – Pick up a pack to frozen hash browns and crisp them up over the fire.

-Ham and Swiss breakfast croissant – This easy breakfast sandwich is so quick to make for those mornings on the go. Just slice in half and add a bit of packaged sandwich meat and a slice of Swiss cheese and you have a crave worthy breakfast to take with you. -View Recipe-
