Homemade blackberry cobbler recipe the entire family will love. Easy recipe made with fresh blackberries and just a touch of lemon juice and sugar for a sweet and zesty flavor.

My husband is the true blackberry lover in the house. Sure, I too like fresh blackberries from the farm but that man divvies them up! One for you… two for me.

Ok maybe that’s a stretch. But when it’s blackberry season, this house gets serious. And since he’s not a dessert person and I am… well… one cobbler for you… two for me.

When it comes to blackberry cobbler, there seems to be about three different variations. The cake like version, the drop biscuit version and the crisp topping version.

Personally, I like the drop biscuit version and most would argue that’s a true cobbler since it resembles cobblestones for a topping. So today we’ll be making blackberry cobbler with drop biscuits.

BLACKBERRY COBBLER RECIPE

  • 18 oz fresh blackberries
  • 1/3 cup water
  • ½ cup sugar
  • 1 TBS lemon juice
  • 1 TBS cornstarch
  • Pinch cinnamon (optional)

Cobbler Topping

  • 1 cup flour
  • 1 ½ tsp baking powder
  • 1/3 cup sugar
  • ½ tsp salt
  • ½ cup cold unsalted butter
  • 1/3 cup milk
  • sprinkle with brown sugar before baking

-Note- if using salted butter, leave out the ½ tsp salt.

BLACKBERRY MIXTURE

Rinse fresh blackberries and place in mixing bowl. Coat with 1 TBS cornstarch and add 1/3 cup water, 1/2 cup sugar, 1 TBS lemon juice and pinch cinnamon (optional). Mix and set aside.

COBBLER TOPPING

In a bowl add 1 cup flour, ½ tsp salt, 1 ½ tsp baking powder and 1/3 cup sugar. Combine.

Cut in 1/2 cup cold butter using a fork until it resembles course crumbs.

Add 1/3 cup milk.

Mix berry mixture again and pour into a 8×8 baking dish. Top with biscuits.

Sprinkle 1 tablespoon of brown (or white granulated) sugar on top.

Bake at 350 for 40-45 minutes until biscuits are done and juices are bubbling.

Serve with vanilla ice cream or whipped topping.

This recipe is so simple to make and tastes light and refreshing. Perfect for those warm summer nights.

Now, since my husband isn’t as big on desserts as I am, I tend to go a little easy on the sugar. Feel free to add a bit more sugar to your liking, but be sure to let those fresh blackberries shine!

Since we serve ours with ice cream, that added sweetness from the vanilla ice cream is perfect for us.

  • Serve with vanilla ice cream (optional)

Notes

*More berries are always better! Feel free to add another berry such as blueberries. 
*If using salted butter, leave out with 1/2 tsp of salt.
