Easy camping breakfast recipe with these delicious sausage balls made right over the fire! Juicy, cheesy, and full of flavor.

While camping we like to enjoy the best of both worlds. First, we like to enjoy our campsite. Set up the hammocks, drink coffee from mugs on an early morning walk, and enjoy a campfire back at our site with a good book and music.
And when we’re done with that we like to explore! Hikes, antique stores, swimming, and everything else in the area you can think of including geocaching.
It’s a few good days of relaxing and being on the go and that’s why these campfire breakfast sausage balls are so perfect.

- ¼ cup maple syrup
- 1 ½ cups flour
- 1 small onion diced
- 1 tsp. baking powder
- 1 ½ tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. salt
- ¼ tsp. pepper
- 1 jalapeno finely chopped (optional)
*Campfire ring with a grate is needed for cooking along with a griddle pan like this 3 in 1 cast iron skillet grill/griddle.

Cooking Instructions
Start a campfire in the pit. Allow to catch on a few logs and then die down to grill over. Place the griddle over the grate to heat before cooking.
Combine ingredients- In a mixing bowl combine the flour, garlic power, onion powder, baking powder, salt and pepper.
Add 1 pound sausage, 1 block shredded cheddar cheese, 1 small onion-diced, ¼ cup maple syrup and 1 finely chopped jalapeño (optional).
Combine. Note* If mixture seems too dry add a splash of milk 1 tablespoon at a time until everything comes together.
Form into balls- Using your hands, shape mixture into 1 inch balls. Place onto heated griddle in batches using long tongs and oven mitts and allow to brown on all sides, rotating every few minutes.
Note- The amount of time to cook will be determined by the heat of the fire under the griddle. Be sure to cook sausage fully to 160℉.
Serve- When fully cooked, remove from griddle using long tongs. Allow sausage balls to cool slightly before serving.

Storage Directions
In this home we usually have a enough sausage balls leftover to enjoy for the next few days. Allow them to cool and place in an airtight container to keep in the refrigerator for up to 4 days.
To reheat, place in the microwave for 30 second intervals or reheat over the stove.

Cooking Tips and Substitutions
- Shred your own cheese for the best texture.
- Be sure not to overmix or the sausage balls might become tough.
- You can make these at home ahead of time for an even easier camping breakfast!
- Adjust the spices to your liking. Try leaving out the jalapeno for a more mild flavor. Or add a bit of red pepper flakes to give it an extra kick.
- We like to sweeten ours with maple syrup but you can also leave it out and have the kids dip them in maple syrup instead for a bit of sweetness.

Camping breakfast sausage balls are a great way to both enjoy a slow morning at the campsite and then take leftovers on the go the next day.
So set up the hammock! Grab a good book, make some coffee and start the fire. You have a lot of relaxing to do.
