Chicken salad is one of those classic meals that feel like a lot of effort was put in, but really you can make this dish even easier if you use rotisserie chicken.
Enjoy it on fresh Italian bread, in a wrap, a simple bed of lettuce or even in a bowl on its own, and your lunch just went from boring to a bit fancy.

Enjoy it whichever way you like but the basics are the same. Chicken and mayonnaise. Everyone makes it a bit different after that. Grapes vs. no grapes. Celery vs. no celery. So here’s my version of the best chicken salad recipe.
CHICKEN SALAD RECIPE
Ingredients
- 2 cups cooked chicken. (I like to use rotisserie chicken)
- 1/2 cup mayonnaise
- 1/2 cup sliced grapes
- juice of a fresh lemon (about 1 TBS)
- 1/4 cup diced red onion
- 2 tsp tarragon
- 1/4 cup chopped walnuts
- salt and pepper to taste
- optional
- 1/2 cup apples
- 1/4 cup dried cranberries
- 1/3 cup celery

Make sure chicken is fully cooked and cooled. Chop or shred chicken into pieces. Combine all ingredients in a large bowl. Serve chilled on your favorite bread, in a wrap or on a bed of lettuce.
LEFTOVERS
You can store leftover chicken salad in the refrigerator for up do 5 days in an air tight container. And be sure not to leave this dish on the counter for more than an hour before placing it back in the fridge.
These are just the simple basics. And once you learn the basics, you can break the rules. Not a red onion fan? Leave it out! Apples and cranberries are always amazing in chicken salad, but if you don’t have them on hand, even just the chicken salad basics are delicious for this lunch or dinner option.
