I came across this cowboy cookies recipe by accident… literally. One morning, while at the grocery store, I was a terrible grocery cart driver. I kept running into this wonderful older couple!

First I knocked down the price tags to the floor, then I moved my cart over to the side so they could go around me while I fixed the tags back on the shelf. But I had placed my cart right in front of the shelf they needed! And so on….

The final straw was at the end of one aisle, as I was quickly getting the dishwasher soap I had forgotten, I ran into them again! Cut them off as we all jolted to a dead stop. I was so embarrassed. Mortified even. I put my head down and hid in the deli section, waiting my turn for sliced American cheese and Butterball turkey.

Rounding the corner for the checkout line my heart sank…

There they were, right in front of me. I put my hands up in the air, smiled behind my mask and said

Hey! You made it in line before me! Thank goodness!

We all laughed and I apologized again for bumping into them at what seemed like the end of every aisle. Since the line was long it gave us a chance to chit chat about their grandkids and somehow this cowboy cookies recipe came up.

Never hearing of cowboy cookies I was intrigued and they were shocked. So here I am now, with this lovely cookie recipe from my grocery store friends that I couldn’t help but run into.

Cowboy Cookies Recipe

Tweaked to our family’s liking.

Ingredients

  • 1 and a ½ sticks of unsalted butter
  • 2 eggs
  • 1 cup granulated sugar
  • 1 cup of brown sugar, firmly packed
  • 2 cups flour
  • 1 tsp. vanilla
  • 1 tsp. salt
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • 2 cups of oats
  • ½ cup of chocolate chips
  • ½ cup of pecans
  • 1 cup of raisins
  • ½ cup of coconut

ALLOW BUTTER TO COME TO ROOM TEMPERATURE

Allow butter and eggs to come to room temperature.

With a mixer, cream together your butter and sugar. Add eggs and vanilla.

IN A SEPERATE BOWL

In separate bowl, combine flour, salt, baking soda and baking powder. -Add to the wet ingredients.

Finally add the oatmeal, raisins, chocolate chips, coconut and pecans. Fold together with a spatula or wooden spoon.

Preheat oven to 350° and line your cookie sheets with parchment paper.
