I mean, it also tastes delicious and takes almost zero effort. So I guess that’s three reasons. But really it only came to happen because I forgot about the bananas.

The kids are constantly looking for something to eat, especially in the mornings for breakfast. Sure we have 5 different kinds of cereal, oatmeal, fruit, yogurt and english muffins. But somehow there is still “nothing to eat.”
So looking over at the fruit bowl you see the bananas and know the choices are throw the browning bananas out, or take the extra time to make homemade bread. You know you want that delicious warm bread with a bit of butter on it, anyway.
EASY BANANA BREAD RECIPE
Ingredients
- 2 cups flour
- 1 ½ tsp. baking power
- ½ tsp. baking soda
- pinch salt
- ½ tsp. cinnamon
- ½ cup chopped nuts (optional)
- 5 extra ripe bananas
- ½ cup butter
- 2 eggs
- 1 cup sugar
- 1 tsp. vanilla extract
Makes one loaf

Preheat oven to 350°
In a large bowl combine all dry ingredients.
- 2 cups flour
- 1 ½ tsp. baking power
- ½ tsp. baking soda
- ½ tsp. cinnamon and a pinch of salt.
Mix together.
In a separate bowl bring together-
- 5 mashed bananas
- ½ cup melted butter
- 2 eggs
- 1 cup of sugar
- 1 tsp. vanilla extract
- nuts (optional)
Add the wet ingredients to the dry and combine using a spatula. Do not over mix.
Spray a bread pan with cooking spray and pour bread mixture into pan.
Bake in preheated oven at 350° for 55-65 minutes. Until fully cooked in the center.

Banana Bread Muffins
Using the same ingredients and instructions, make your batter.
Spray a muffin tin and fill with batter approximately ¾th the way full.
Bake in 375° preheated oven for 18-22 minutes.
Allow to cool.

- pecans
- cashews
How to store leftovers
Storing leftover banana bread and muffins is easy and requires no refrigeration. Place in air tight container and store on the counter. Leftovers are best to be eaten within three days.
