Easy mango salsa recipe made with just a few simple ingredients. Perfect for summer gatherings and ready in no time!

Fresh summer fruit doesn’t last long in this house. For two reasons- Either the kids eat it all in one day, or the fruit becomes too ripe and decides to go bad less than 2 days!
As much as I’d like to save the fruit, either kids or freshness have other plans, making me feel a bit less bad about getting 3 or 4 mangos at the store when I can find them for a good price. Since good price and mangos don’t usually go hand in hand, it’s best to enjoy them quickly, and this mango salsa is perfect for that.

Easy Mango Salsa Recipe
When the summer heat comes around our appetites can get a bit funny. The thought of turning on the oven or even cooking on the stove has me reaching for a popsicle.
What I’m really looking for is something light and refreshing, and that is exactly what this mango salsa is. Light and refreshing. The perfect summer snack or BBQ side dish that takes little effort and comes together quickly. It’s fruity, spicy, and salty with the tortilla chips. Exactly everything you’re looking for when the humidity comes to town.

Ingredients
- 3 mangos
- ½ cup red onion
- 1 cup cucumber
- 1-2 jalapenos
- ¼ fresh cilantro
- Juice of 1 lime (2 TBS)
- 1 TBS apple cider vinegar
- ½ tsp. salt

How to Make Mango Salsa- Step by Step
Prepare your ingredients- Dice the mangos into small cubes. Make sure they are ripe but not mushy. Then finely chop the red onion, cucumber, and jalapeno.
Mix together- In a medium bowl, combine ingredients. Add chopped cilantro, apple cider vinegar, and lime juice. Season with salt. Gently fold until everything is well combined.
Chill and serve- For the best flavor, allow salsa to chill in the refrigerator at least 30 minutes. Serve with tortilla chips, on tacos, grilled fish, or chicken.

Tips for Picking the Best Mangos
- Color- Mangos should be vibrant. Look for mangos that have a mix of red, yellow and green.
- Feel- Give the mango in question a little squeeze, they should have a little give without being too soft.
Substitutions and Variations
I’m a big fan of recipes that I can put my own twist on. But really, the twist is whatever I already have on hand. So if you’re anything like me you’ll want to use what’s in your own pantry. Although I do like the recipe as is, you can also try these variations.
- Make is spicier or less so- Adjust this recipe to your spice level.
- Citrus- No lime? I like using lemon with this recipe as well. 2 TBS of lemon juice is perfect in this recipe.
- More fruit- Add pineapple or a red bell pepper!
