Homemade green bean casserole. Delicious green bean casserole from scratch. The perfect side dish to almost any holiday or dinner.

I haven’t always been a green bean lover but it’s because I tried them the wrong way! I’m sorry I can’t do canned green beans, and I can’t do frozen green beans. The canned are too mushy and the frozen are too rubbery.

When we started buying fresh green beans it was a game changer! And now that I’m an adult, I’m expected to bring a dish to the holiday event. If I’m not the host I bring green bean casserole because someone has to bring the veggies!

Green bean casserole from scratch

It’s me… I always bring the veggies. Everyone else brings the fun dishes but when it comes to salads and veggies, I’m your girl. And not boring either! No, I have to over complicate e.v.e.r.y.t.h.i.n.g.

I’m just kidding. Once you make it from scratch a few times it’s a breeze and it’ll be the only way you’ll want to eat green bean casserole from then on.

HOMEMADE GREEN BEAN CASSEROLE

Ingredients

  • 1- lb green beans
  • ½ cup milk
  • ½ tsp salt
  • ⅛ tsp pepper
  • bacon- optional
  • Homemade condensed cream of mushroom soup-
    • 1 TBS butter
    • 6- sliced baby bella mushrooms
    • ¼ cup flour
    • ¾ cup broth (veggie, turkey or chicken)
    • ½ cup milk
    • ¼ tsp onion powder
    • ½ tsp garlic
  • TOPPING- Homemade French fried onions
    • 1- med onion
    • Oil for frying
    • 1- cup flour
    • 1- cup milk
    • ½ tsp Cayenne pepper
    • ½ tsp Paprika
    • salt & pepper

STEAM YOUR GREEN BEANS

Wash and trim the ends of your green beans. Place in steaming basket over 1-2 inches of water and bring to boil. Reduce to simmer and allow your green beans to steam another 5 minutes. They should be bright green and still have a little crunch.

MAKE YOUR CREAM OF MUSHROOM SOUP

While green beans are steaming, make your condensed soup. Over medium high heat melt 1 TBS butter and Slice up 6 baby bella mushrooms.

Sauté until tender. Season with salt and pepper.

Add 1/4 cup flour and and continue to cook for 30 seconds to 1 minute. Add 3/4 cup broth and 1/2 cup milk. Whisk.

Add 1/2 tsp garlic powder and 1/4 tsp onion powder.

Continue to stir.

As sauce thickens, bring to low heat. Stir.

Once thickened-remove from heat.

COMBINE GREEN BEANS AND SOUP MIXTURE

In a large bowl combine green beans, soup mixture, ½ cup milk, ½ tsp salt and ⅛ tsp pepper. Mix and pour in casserole dish.

FRIED ONIONS RECIPE

You can either use French’s onion crisps or make your own. I love French’s but this year the store was out. Forcing me to think outside the box. Since I was in charge (again) of green bean casserole, I could NOT disappoint. So we made our own!

In a large frying pan place a thin layer of vegetable oil. Bring to medium heat.

While the pan heats up, thinly slice your onion. Place in medium bowl and add 1 cup of milk. Soak.

In another bowl add flour, Cayenne pepper and Paprika. Mix.

Using your hands lift the onion and fully coat in flour mixture.

Doing a batch at a time, fry your onions until golden brown. Place on paper towel. Immediately season with salt and pepper.

Repeat until done.

Homemade fried onions-casserole topping

BAKE AT 350

Top your casserole with fried onions. Place in preheated oven and bake at 350 for 20-25 minutes.

BACON?

With or without bacon? Some might argue that that is never a question. If you do want to top with bacon, place in oven with the casserole and flip bacon halfway through. Bake for 20 minutes, keeping a close eye on it.

Making it from scratch does take a little bit more time and effort. If that’s not your thing that’s ok! In this house, we like to cook from scratch. That’s not to to say that shortcuts are not a warm welcome every once in a while. Because although I’ve tried, laundry and dishes never end!
