After a few days into the week the meals get a little harder to plan! We’ve eaten all the fun food and now I’m paying the price for not making a list.
It usually ends up with us eating chicken breasts a few different ways. Grilled chicken, chicken casseroles, and thankfully, this easy homemade chicken patty recipe.

Homemade Chicken Patties
These homemade chicken patties are perfect for weekend dinners. They are juicy and delicious and made with simple ingredients. All you need is a couple of large chicken breasts and you can make your own simple, homemade chicken patties that are both fresh and delicious.
Serve with french fries, coleslaw, mac salad, baked beans, or any of your summer favorites!

Ingredients
- 2 large chicken breasts
- ½ cup breadcrumbs
- ¼ cup parmesan cheese
- 1 egg
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 TBS Dijon
- 1 TBS mayonnaise
- 1 TBS parsley
- ½ tsp. salt
- ¼ tsp. pepper

Cooking Instructions
Prepare the chicken- Chop the chicken into small pieces and place into large bowl. You can also use a food processor to pulse large chopped chicken breasts into a mince, taking care not to over-pulse and keep a good texture.
Mix the ingredients- Combine ½ cup breadcrumbs, ¼ cup parmesan cheese, 1 egg, 1 tsp. garlic powder, 1 tsp. onion powder, 1 TBS Dijon, 1 TBS mayonnaise, 1 TBS parsley, ½ tsp. salt, and ¼ tsp. pepper. Mix until well combined but do not over mix as it can make the patty tough.

Form the patties- Divide the patties into 5-6 equal portions and roll each patty into a ball. Flatten patty to even thickness. To help with this process you can use a burger press found on Amazon.
Bake- Place on baking tray and bake in preheated oven at 400℉ for 20-25 minutes or until fully cooked. Internal temperature of 165℉.
Serve and enjoy- Serve on buns and add your favorite toppings!
