Pasta Salad For Potlucks
When the weather starts to warm this is always one of the dishes requested first. Well, grilling burgers and then pasta salad.
Over the years my recipe has changed a little bit and the once complicated dish I use to make has been scaled back and simplified.
It’s still every bit of delicious but now it’s a side I almost always have ingredients on hand for and can be easily customized the vegetables to what I have in the fridge.

Why You’ll Love This Recipe
- Simple pantry ingredints
- Comes together quickly
- Flavors improve after chilling
- Great for potlucks, picnics, and family dinners
- Easily customizable to what you have in the fridge
Ingredients
- 12oz Rotini
- 10oz cherry tomatoes
- 1 cucumber
- 6oz cheddar cheese
- ½ to ¾ cup Zesty Italian dressing
- salt and pepper to taste
These are the basic ingredients for a simple pasta salad but you may want to customize it for what you have on hand or your own flavor palate!
Now, my kids love pasta salad but they can be picky when it comes to “extras.” So instead of adding everything, I chop up each of our favorites and offer them in small bowls so they can put in their favorites add ins. It’s really not a big production and sometimes I just put the extras, such as olives, in tiny Tupperwares I’ve saved from the Chinese restaurant up the street.
This way they’ll eat it because it doesn’t have olives, but it’s also an easy thing to do and always puts a smile on their face.
- salami
- parmasan cheese
- red onions
- olives
- peppers
- garbanzo beans

Step by Step Instructions
Cook the pasta- Bring a pot of salted water to a boil and cook pasta according to package. Drain and rinse under cool water to stop the cooking. Be sure not to overcook the pasta.
Prepare the vegetables- While the pasta cools, chop the tomatoes, cucumber, and cheese into bite-sized pieces.
Combine the salad- In a large bowl add the pasta, vegetables, and cheese. Season with a pinch of salt and bit of pepper to taste. Pour ½ to ¾ cup Zesty Italian dressing over the salad and toss gently to coat.
Chill before serving- Refrigerate for at least 30 minutes before serving so the flavors can come together. Tastes even better overnight! Give a quick toss and add a bit more Zesty dressing if needed.
