THREE BEAN SALAD RECIPE

Three bean salad is a great way to get added fiber and other nutritions into your diet. With several different kinds of beans, along with a simple and zesty dressing, you’ll love this guilt free side idea.

We’re keeping this recipe simple by using canned beans. It’ll save us time and energy and since this is a summer recipe, the last thing I went to do is turn on the stove or oven.

INGREDIENTS

  • 1- 15 oz can Kidney beans
  • 1- 15 oz can Black beans
  • 1- 15 oz can Garbanzo beans
  • 1- 10 oz container grape tomatoes
  • 1 Orange pepper
  • 1/2 Red onion
  • 1/2 Bunch fresh parsley

DRESSING

  • 1/4 cup apple cider vinegar
  • 2 TBS olive oil
  • 2 TBS sugar
  • 1 tsp. dry mustard
  • 1 tsp. garlic powder
  • salt and pepper to taste

INSTRUCTIONS

Start by draining and rinsing the beans.

In a large mixing bowl add beans, 1 diced orange pepper, 1/2 finely chopped red onion, 1/2 bunch of parsley, and entire 10 oz container of grape tomatoes, sliced. Combine.

Dressing- In a bowl add 1/4 cup vinegar, 2 TBS olive oil, 2 TBS sugar, 1 tsp. dry mustard, 1 tsp. garlic powder, salt and pepper to taste.

Drizzle on top of bean salad and toss until well coated.

Allow to chill in refrigerator at least one hour.

Preparation breakdown. Rinsed beans, diced vegetables, tossed to combine.

This recipe is incredibly easy to customize to your liking. Although the red onions in this recipe are so very delicious! (in my opinion)
