Using the same ingredients several different ways you can make turkey enchiladas, fajitas, pot pie, cheese and broccoli casserole and my all time favorite turkey soup.

Growing up, turkey soup with homemade broth was only something we ate once or twice a year. Either after Thanksgiving or after Christmas. But I’m in love with easy turkey meals so much that it’s a staple here in this house during the chilly months.
Come April my husband breaths a sigh of relief when I bring back beer brats and tri tip on the grill.
TURKEY SOUP RECIPE WITH RICE
Ingredients
- 2 cups cooked turkey
- 1 medium onion
- 3 medium carrots
- ½ cup uncooked rice
- ½ cup frozen peas
- 8 cups turkey broth (homemade or store bought)
- 3 cloves garlic
- 2 TBS butter
- ¼ tsp. thyme
- ½ tsp. basil
- ½ tsp. oregano
- 1 bay leaf
- salt and pepper to taste (start with ½ tsp. salt and ⅛ tsp. pepper)

COOK ONIONS UNTIL SOFT
In a large pot, melt butter over medium heat and add diced onion. Cook until soft. Mince three cloves of garlic and add to onions. Give it a stir once or twice and add turkey broth.
ADD CARROTS AND RICE
Slice 3 medium size carrots and add to broth. Measure and add ½ a cup of uncooked rice. Add remaining seasoning and allow to simmer covered for 15 minutes.
The carrots and rice should only take 15 minutes, on a simmer, to cook through. However, sometimes I’ll cook my rice separately if I’m cleaning up or doing something with the kids. It’s easy to get distracted and accidentally overcook the rice.

COOKED TURKEY AND FROZEN PEAS
Just as the carrots and rice are finishing up, add the cooked turkey and frozen peas. This way they can fully warm up before serving. You can also use a can of drained canned peas if you prefer. Again, adding them right at the end.
Salt and pepper to taste.
Serve with fresh bread or garden salad.
