This cabbage soup recipe is packed full of vegetables making it both hearty and filling. And since we’re adding a few spices and even some red pepper flakes, this soup has all the flavor you need and with a bit of a kick.

CABBAGE SOUP RECIPE

Ingredients

  • 1 TBS olive oil
  • 1 small onion
  • 3 garlic cloves
  • 3 carrots
  • 3 celery ribs
  • 1 small head of cabbage
  • 64oz (two boxes) chicken broth
  • 14oz fire roasted diced canned tomatoes
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. basil
  • 1 tsp. oregano
  • ½ tsp. red pepper flakes (optional)

SAUTE VEGETABLES

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables start to soften.

Stir in the minced garlic and cook for another minute until fragrant.

ADD CABBAGE TO SOUP

Add the shredded cabbage to the pot and cook for about 5 minutes, stirring occasionally, until it begins to wilt.

Pour in the diced tomatoes (with their juice) and the chicken broth. Add seasonings. 1 tsp. salt, ½ tsp. pepper, 1 tsp. basil, 1 tsp. oregano and ½ tsp. red pepper flakes (optional).

SIMMER

Bring soup to a boil, then reduce the heat to low, cover, and let simmer about 20-25 minutes, or until the vegetables are tender.

Serve with side salad or a slice of bread.
