- 2 large chicken breasts
- ½ cup breadcrumbs
- ¼ cup parmesan cheese
- 1 egg
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 TBS Dijon mustard
- 1 TBS mayonnaise
- 1 TBS parsley
- ½ tsp. salt
- ¼ tsp. pepper
Chop the chicken into small pieces and place into large bowl. You can also use a food processor to pulse large chopped chicken breasts into a mince, taking care not to over-pulse and keep a good texture.
Combine ½ cup breadcrumbs, ¼ cup parmesan cheese, 1 egg, 1 tsp. garlic powder, 1 tsp. onion powder, 1 TBS Dijon, 1 TBS mayonnaise, 1 TBS parsley, ½ tsp. salt, and ¼ tsp. pepper. Mix until well combined but do not over mix as it can make the patty tough.
Divide the patties into 5-6 equal portions and roll each patty into a ball. Flatten patty to even thickness.
Place on baking tray and bake in preheated oven at 400℉ for 20-25 minutes or until fully cooked. Internal temperature of 165℉.
Serve on buns and add your favorite toppings!
Helpful tips-- Chill before cooking- To help the chicken patties keep their shape, chill patties in the refrigerator 15 minutes before cooking.
- Use damp hands to shape the patties easily without sticking.
