  • 2 cup cooked turkey
  • 1 medium onion
  • 3 medium carrots
  • 1/2 cup uncooked rice
  • 1/2 cup frozen peas
  • 8 cups turkey broth
  • 3 cloves garlic
  • 2 TBS butter
  • 1/4 tsp thyme
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1 bay leaf
  • 1/2 tsp salt- to taste
  • 1/8 tsp pepper- to taste


  • In a large pot, melt butter oven medium heat and add diced onion. Cook until soft.
    Mince three cloves of garlic and add to onions. Give it a stir once or twice and add turkey broth.
  • Slice 3 medium size carrots and add to broth.
    Measure and add 1/2 a cup of uncooked rice. Add remaining seasoning and allow to simmer covered for 15 minutes.
  • Just as the carrots and rice are finishing up, add the cooked turkey and frozen peas.
  • Warm through and serve with french bread or fresh salad.
