Delicious blackberry cobbler made with fresh blackberries and simple ingredients.

Ingredients

  • 18 oz fresh blackberries
  • 1/3 cup water
  • 1/2 cup sugar
  • 1 TBS lemon juice
  • 1 TBS cornstarch
  • Pinch cinnamon (optional)

Cobbler Topping

  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter
  • 1/3 cup milk
  • 1 TBS sprinkle with brown sugar (optional)

Instructions

Berry Mixture

  • Rinse fresh blackberries and place in mixing bowl. Coat with 1 TBS cornstarch and add 1/3 cup water, 1/2 cup sugar, 1 TBS lemon juice and pinch cinnamon (optional). Mix and set aside.

Cobbler Topping

  • Preheat oven to 350.
  • In a bowl add 1 cup flour, ½ tsp salt, 1 ½ tsp baking powder and 1/3 cup sugar. Combine.
  • Cut in 1/2 cup cold butter using a fork until it resembles course crumbs.
  • Add 1/3 cup milk.

8x8 Baking Dish

  • Stir the berry mixture again and pour into 8x8 baking dish.
  • Top with biscuits and sprinkle 1 TBS brown sugar on top.
  • Bake at 350 for 40-45 minutes until biscuits are done and juices are bubbling.
  • Serve with vanilla ice cream (optional)

Notes

*More berries are always better! Feel free to add another berry such as blueberries. 
*If using salted butter, leave out with 1/2 tsp of salt.
