Delicious blackberry cobbler made with fresh blackberries and simple ingredients.
- 18 oz fresh blackberries
- 1/3 cup water
- 1/2 cup sugar
- 1 TBS lemon juice
- 1 TBS cornstarch
- Pinch cinnamon (optional)
- 1 cup flour
- 1 1/2 tsp baking powder
- 1/3 cup sugar
- 1/2 tsp salt
- 1/2 cup cold unsalted butter
- 1/3 cup milk
- 1 TBS sprinkle with brown sugar (optional)
Preheat oven to 350.
In a bowl add 1 cup flour, ½ tsp salt, 1 ½ tsp baking powder and 1/3 cup sugar. Combine.
Cut in 1/2 cup cold butter using a fork until it resembles course crumbs.
Add 1/3 cup milk.
8x8 Baking Dish
Stir the berry mixture again and pour into 8x8 baking dish.
Top with biscuits and sprinkle 1 TBS brown sugar on top.
Bake at 350 for 40-45 minutes until biscuits are done and juices are bubbling.
Serve with vanilla ice cream (optional)
*More berries are always better! Feel free to add another berry such as blueberries. *If using salted butter, leave out with 1/2 tsp of salt.
