Ingredients

  • 6 burrito tortillas
  • 16oz breakfast sausage
  • 1 russet potato
  • 6 eggs
  • 1 red bell pepper
  • 1/2 onion
  • 6oz cheddar cheese
  • hot sauce optional

Instructions

  • Start the campfire.
  • Place the cast iron skillet griddle side up on the campfire grate. Allow to heat up.
  • Gather ingredients
  • Fully cooking the sausage over the campfire. Set aside.
*Do not use cooking oil as the fat from the sausage is enough to keep it from sticking.
  • Dice russet potato.
Add potatoes to griddle and cook in the fat from the sausage, and season with salt and pepper.
Cook until golden brown. Flip frequently.
Take care not to allow the fat to drip into the fire.
    Remove and set aside.
  • Move the griddle to a cooler part of the campfire grate using heat safe gloves.
Allow to cool slightly. Dice 1/2 onion and 1 red bell pepper. Cook until soft.
  • In a medium bowl add 6 eggs and 1-2 TBS water. Whisk.
  • Arrange cooked vegetables into a circle around the griddle as a barrier for the eggs.
Slowly add eggs to the middle of the circle. Season with salt and pepper.
    Cook. Top with cheddar cheese.
Remove eggs and veggies from heat.

Assemble Breakfast Burrito

  • On a burrito tortilla add a horizontal layer of sausage, potatoes, eggs and peppers. Add hot sauce (optional).
  • Wrap by folding in the sides. Fold up once. Fold in sides again. Fold up once.
  • *optional- Warm filled burrito on the griddle until golden. This will help seal the seam closed.

Notes

Note- Most campsites now offer a campfire grate which is needed for this recipe, along with a cast iron skillet or griddle.
Note- Since the sausage already has fat in it, you will not need to add oil the griddle. It also important to make sure that your griddle is level and or has a lip as to not drip fat into the fire.
