Ingredients
1refrigerated pizza dough
1 ½ cupmozzarella cheese
1 cup marinara or pizza sauce
1TBSolive oil for cooking
pinch of salt
1tsp.Italian seasoning
grated parmesan cheese (sprinkle on top)
toppings of choice; pepperoni, mushrooms, olives, pineapple, ham, ect.
Instructions
On a floured surface, roll out the pizza dough to about ¼-inch thickness. Cut the dough into small squares, roughly 2x2 inches each. You should get about 24 squares, depending on the size of your dough.
Add mozzarella cheese and a few pieces of your chosen toppings. Be careful not to overfill!
Fold each dough square over the filling to form a small pocket. Pinch the edges together to seal, then gently roll each pocket in your hands to shape it into a ball. Sprinkle the dough balls with a pinch of salt before cooking.
In a large skillet, heat the olive oil over medium heat. You want enough oil to lightly coat the bottom of the skillet.
Place the sealed pizza bites seam-side down in the skillet. Cover and cook for 2-3 minutes on each side, or until golden brown and cooked through. You may need to do this in batches, depending on the size of your skillet.
Once cooked, remove the pizza bites from the skillet and place them on a plate. Sprinkle with Italian seasoning and a little grated Parmesan cheese, if desired.
Serve warm with extra marinara sauce for dipping.
