Preheat oven to 350°F.
Start by gathering your ingredients. Heat pan to medium heat.
In a large mixing bowl add 1 cup cottage cheese, ½ chopped onion, 1 entire sleeve of crushed up saltine crackers, 3 eggs, 2 TBS onion soup mix, 2 TBS melted butter, ½ tsp. garlic powder, ⅛ tsp. pepper, and (optional) ¼ cup chopped walnuts. Mix to combine.
Add 2 TSB cooking oil to pan. Using a spoon or ice cream scoop drop a tablespoon sized portion into the frying pan. Flatten slightly using a small spatula.
Allow to brown on one side and flip once to brown the other side. Approximately 45-60 seconds for each side.
Place the finished patties in a lightly greased 9x13 casserole dish. Continue to fry in batches until all the patties are browned.
In a medium mixing bowl add 1- 10 oz. can condensed cream of mushroom soup, ½ cup milk, and ½ cup sour cream. Whisk until combined.
Pour over browned cottage cheese patties in casserole dish.
Place in preheated 350° oven and cook for 35 minutes until gravy mixture becomes bubbly.
