- 12 oz Rotini
- 10 oz cherry tomatoes
- 1 cucumber
- 6 oz cubed cheddar cheese
- 1/2 cup Zesty Italian Dressing
- salt and pepper to taste
Bring a pot of salted water to a boil and cook pasta according to package. Drain and rinse under cool water to stop the cooking.
While the pasta cools, chop the tomatoes, cucumber, and cheese into bite-sized pieces.
In a large bowl add the pasta, vegetables, and cheese. Season with a pinch of salt and bit of pepper to taste. Pour ½ to ¾ cup Zesty Italian dressing over the salad and toss gently to coat.
Refrigerate for at least 30 minutes before serving so the flavors can come together. Tastes even better overnight!
Homemade Dressing Recipe- 1/3 cup olive oil
- 2 TBS red wine vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. garlic powder
- 1 tsp. Italian seasoning
- pinch of salt and pepper
In a small bowl or jar, whisk together olive oil, vinegar, mustard, and seasonings until well combined. Drizzle over pasta salad and toss to combine. Over time the pasta may absorb the Italian dressing, be sure to add a bit more and give it a quick toss before serving. *Nutritional information provided is an estimate and will very based off of brands of ingredients used and cooking methods.
