- 12 oz milk chocolate
- ½ cup peanut butter
- 12 saltine crackers
- ¼ cup powdered sugar
- 1 TBS butter
Melt ¾ cup milk chocolate using a double broiler or microwave. Heat slowly in short 20 second bursts, stirring frequently to avoid chocolate from becoming too hot and seizing.
Line a cupcake tray with paper or silicon liners and add an even amount into the bottom of each liner. Spread flat using a butter knife and similar. You can also tap the tray on the counter to help it spread flat.
Place in freezer to set.
In a medium bowl add ½ cup peanut butter, crushed crackers, ¼ cup powdered sugar and 1 TBS melted butter. Mix together using a handheld mixer until smooth and combined.
Take the muffin tin from the freezer and add a small spoonful of peanut butter to the 12 liners, taking care not to overfill them.
Push flat with the back of a spoon.
Melt remaining milk chocolate using short 20 second burst in the microwave (stirring frequently) and fill each tin evenly. Use a toothpick or butterknife to help make a flat top or tap on the counter to help smooth it out.
Place in freezer or refrigerator for 15 minutes to fully set.
Bring to room temperature before eating.
