Apple Cinnamon Muffins
A lot of our recipes rotate with the season, keeping meals a bit more exciting. So once again I made this recipe for our fall morning breakfasts on the go. We have a few of those types of recipes since mornings tend to get busy and we are all out the door at different times.
This morning while driving our oldest to school I asked if it was just as good as she remembered from last year. Her response? “It’s really good but I think we should add nuts next time.” Nuts! I said a bit surprised. “Yeah, I think it would taste more like a warm apple pie with some nuts.”
And you know, I think she might be right.

Ingredients
- Muffins
- 1 ½ cups flour
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 tsp. ground cinnamon
- ½ cup (1 stick) butter
- ⅔ cup brown sugar
- 2 eggs
- ½ cup greek yogurt (or sour cream)
- 1 tsp. vanilla extract
- 1 ½ cups shredded apples (Honeycrisp or Granny Smith work great)
- Streusel topping
- 2 TBS butter (cold)
- ¼ cup flour
- 2 TBS brown sugar
- ¼ tsp. cinnamon
- ¼ cup chopped pecans or walnuts (optional)

Step by step instructions
Make the streusel topping- In a bowl, mix flour, brown sugar, and cinnamon. Cut in cold butter with a fork until crumbly in texture. Set aside.
Prepare the muffin batter- In a large bowl, whisk together 1 ½ cups flour, 1 tsp. baking powder, ½ tsp. baking soda, ½ tsp. salt, and 1 tsp. cinnamon.
In a medium bowl, whisk together ½ cup (1 stick) melted butter and ⅔ cup brown sugar until smooth. Add 2 eggs, ½ cup yogurt, and 1 tsp. vanilla. Mix until combined.
Fold wet ingredients into dry and mix. Add 1 ½ cups apples until incorporated throughout the batter, taking care not to overmix.
Bake the muffins- Preheat oven to 400℉. Grease or line a muffin tin with paper liners. Divide batter evenly into each cup. Approximately ¾ full.
Sprinkle the streusel mixture topping generously onto the top of each muffin. Bake for first 5 minutes at 400℉ before dropping the temperature to 375℉ for an additional for 16-20 minutes, or until a toothpick comes out clean.

Baking Tips and Apple Types
Choose the right apples- Honeycrisp gives sweetness while granny smith adds tartness. Golden Delicious are also great with a mellow, buttery flavor. Fuji and Pink Lady are good options also.
Shredded apples- I like to use a cheese grater to shred my apples. It allows the apples to release more flavor and blend into the batter a bit better. You can also dice them if you prefer that way better. *Tip- I also shred my cold butter into the streusel topping. I find it easier to work with to get the crumbly topping we’re looking for.
Don’t overmix the batter- Stir batter just until combined for the best fluffy muffins.
Extra crunch- Add chopped walnuts or pecans to the streusel for an added flavor burst.
Bakery style- We’re baking these muffins at 400℉ for the first 5 minutes, and then lowering it to 375℉ for the rest of the time remaining. This gives them the bakery dome look everyone loves.
