Easy broccoli salad recipe made with Greek yogurt. Creamy, crunchy, and perfect for a light summer side dish that is filled with fruit and veggies.

Cooking slows down during the warm months and by the time I’m hungry I’m not interested in making something complex that requires kitchen clean up once it’s made.
This broccoli salad recipe is perfect for those types of days because with just a few fresh ingredients I can have a delicious, crunchy salad several days in a row while I wait for cooler weather and more motivation.

I’d love to tell you that everyone loves this dish but I have a couple of kiddos who are in the “broccoli is gross,” phase.
Now, I can’t be too upset because these kids eat asparagus and brussel sprouts willingly! But broccoli has gotten a bad wrap from almost every kids movie and the power of persuasion can be strong. Thank goodness the screenwriters left the other veggies alone.
So who are we making this for? You and me and possibly the potluck this weekend. This is the go to summer easy salad us moms can eat at 11am while the kids are playing in the sprinkler and asking for boxed mac and cheese.
The salad that’ll fuel us with all good things to find energy to tear ourselves away from our good book every other sentence when the kids say “Mom! Look at me!” (always look, they grow up too fast.)
This is our mom salad because we can’t live off of coffee alone.

But since it’s made with Greek yogurt instead of mayo, it feels light while tasting indulgent. The yogurt adds protein and a bit of tang without overpowering the salad and it pairs really well with grilled chicken and sandwiches.
