Easy carrot ginger soup recipe made with simple ingredients. Quick and delicious- Ready in under 40 minutes.

Carrot ginger soup is one of my favorite soup recipes for the cooler months. The first time I ever made it we were stationed in Hawaii. Even though it wasn’t cold, it was fall, and a part of me was missing the cool autumn air of New England.
Even though it was a pleasant 78 degrees, I made this soup and turned up the air conditioning to pretend we were back home in the cool weather.

EASY CARROT GINGER SOUP RECIPE

How to make carrot ginger soup
Saute- In a large pot, melt butter over medium heat. Add diced onion and cook until soft. Stir in minced garlic, ginger, and curry powder. Saute for another minute until fragrant.
Add carrots and broth- Add sliced carrots to the pot and pour in broth. Bring mixture to a boil, then reduced heat to low. Cover and simmer 20-25 minutes, or until carrots are tender.
Blend until smooth- Use an immersion blender to puree the soup directly in the pot, or carefully transfer the soup to a countertop blender and blent in batches.
Season to taste- Season with salt and pepper
Serve and garnish- Ladle into bowls and garnish with your choice of toppings. A drizzle of coconut milk or a spinkle of fresh herbs.

*Notes- Do not over fill blender and be sure to allow steam to escape. Follow blender manufacture guidelines. Be cautious of the hot contents.
Cooking Tips
- Roast the carrots- To give a bit more depth and caramelized flavor, roast the carrots in the over at 400℉ for 20 minutes before adding them to the pot.
- Adjust the consistency: If you feel the soup is too thick, add more broth or water until you reach your desired texture.
- Booth the creaminess: Stir in a splash of heavy cream, coconut milk, or even a dollp of Greek yogurt for added richness.
